Corn and avocado are ingredients that have significant historical and cultural backgrounds. Corn has been a staple in the Americas for thousands of years, originating as a crucial crop among Indigenous peoples. Avocado, another ancient crop from the same region, is known for its creamy texture and health benefits. Combining these two ingredients creates a dish that feels both timeless and current, reflecting the lasting influence of Mesoamerican cuisine on today’s global palate.

This corn and avocado salad is a light, refreshing dish perfect for warm days when you want something easy yet vibrant. Packed with juicy cherry tomatoes, creamy avocado, and tangy feta cheese, this salad makes a great side dish or even a main course. The addition of lime juice and arugula gives it a delightful zing and a hint of bitterness, balancing the sweetness of the corn. Avocados and corn have deep roots in Mesoamerican cuisine, where these ingredients have been staples for centuries. This dish celebrates those flavors with a modern twist, ideal for outdoor gatherings or quick weekday meals.
Ingredients
2 limes (zest and juice)
2 pints cherry tomatoes, halved
1 (32 oz) bag frozen corn, thawed
2 large ripe avocados, cubed
½ cup extra virgin olive oil
2 tsp minced garlic
1 (5 oz) bag baby arugula
1 (6 oz) package crumbled feta cheese
Salt and pepper, to taste
Instructions:
Zest and juice both limes.
Halve the cherry tomatoes and place them in a large container with the thawed corn.
Halve the avocados lengthwise, remove the pits, and cut them into cubes. Toss avocado cubes with 2 tablespoons of lime juice and add to the salad.
In a separate container, mix the remaining lime juice, lime zest, olive oil, minced garlic, salt, and pepper. Shake well to combine.
Store the salad, dressing, arugula, and crumbled feta in the fridge or a cooler until ready to serve.
Just before serving, toss the salad with the arugula and dressing, then garnish with crumbled feta cheese.
Pro Tips and Customizations
For a spicier kick, add some diced jalapeño or a sprinkle of red pepper flakes.
Substitute feta with goat cheese or queso fresco for a different flavor.
If fresh corn is available, consider grilling it to add a smoky dimension to the salad.
